CLART 202 - Intermediate Baking Theory
5.0 Credits Intermediate baking theory explores composition of plated desserts with emphasis on frozen and churned desserts. Students are introduced to confectionary. Prerequisite CLART 102. Course-level Learning Objectives (CLOs) Upon successful completion of this course, students will be able to:- Describe and analyze a variety of creamy mixtures.
- Define and describe confectionery preparations.
- Describe the methods for preparing frozen desserts.
- Design and describe the creation and composition of individual desserts from simple to complex including decor.
