3.0 Credits Exploration of complex bakery formulas and technique at an advanced level. Prerequisite CLART 102. Course-level Learning Objectives (CLOs) Upon successful completion of this course, students will be able to:
- Describe and analyze a variety of cream-based fillings.
- Define and describe chocolate and sugar work techniques.
- Design and describe the creation of various frozen desserts.
- Design and describe the creation and composition of individual desserts from simple to complex including decor.
